Calcium stearoyl-2-lactylate is a food additive of natural origin, derived from a combination of calcium, stearic acid and lactic acid.
The origin of stearic acid can be either vegetable or animal, although the one of vegetable origin is almost always used.
These additives are used, in the various products, for their emulsifying and stabilizing function. They can be mainly contained in bakery products (toast, soft rolls).
At the moment there are no known negative side effects on human beings deriving from the consumption of food products with added calcium stearoyl-2-lactylate.
ADI dose: 20 mg per kg of body weight.
